This weekend I made Strawberry Bread. I haven't made it in a while, but it's yummy! Hopefully we'll have some new blog visitors this week, so I thought I'd share my recipe with you all and our new friends too. And, don't forget the contest.
Strawberry Bread (my version)
3 c. whole wheat flour
1 c. brown sugar
1 tsp. salt
1 tsp. soda
1 tsp. cinnamon
3 eggs, well beaten
3/4 c. olive oil
4 c. chopped strawberries, drained (frozen works, too)
Combine dry ingredients. Add eggs and oil, stir slightly. Fold in berries. Put batter into a 9" loaf pan. Bake @ 350 for about 1 hour, until a toothpick comes out clean.
Now for the book version (The Practical Produce Cookbook by Ray and Elsie Hoover and Family)
3 c. flour
2 c. sugar
1 t. salt
1 t. soda
1 t. cinnamon
3 eggs, well beaten
3/4 c. vegetable oil
2 1/2 c. strawberries, drained
1 c. chopped pecans (optional)
Combine dry ingredients. Add eggs and oil, stirring briefly. Fold in berries and nuts. Spoon batter into two 8 x 4 loaf pans. Bake at 350 about 1 hour. Freezes well.

ReplyDeleteThis sounds delicious! I am definitely going to give it a try because my children LOVE strawberries and they LOVE sweet bread so the combo of the two should be a definite winner! Thanks for posting this!
